The secret to making this dish delicious is the seasonings and you need a lot of them. You will need onion powder, ginger powder, paprika, cumin, turmeric, parsley, thyme, salt, and pepper. It is the best alternative to grilled chicken kabobs when you can’t prepare them on your grill due to the weather. To make these chicken skewers at home, cut the chicken, mix in all the other ingredients, and thread it into the skewers. Once done, it is ready to go in the oven. How quick and easy is that? Just make sure to soak the skewers first so they will not burn in the oven.
Start by cutting the chicken into bite-sized pieces. Transfer to a large bowl.
Drizzle 2 tablespoons of olive oil, 1/2 cup of plain yogurt, 4 cloves of minced garlic, 1 teaspoon of onion powder, 1/2 teaspoon of ginger powder, 2 teaspoons of paprika, 1/2 teaspoon of cumin, 1/2 teaspoon of turmeric, 2 tablespoons of freshly chopped parsley, 1 tablespoon of freshly chopped thyme, salt, and pepper to taste. Mix until well combined. Cover the bowl and let it marinate in the fridge for at least one hour.
Soak your skewers in water for about 20 minutes.
Cover your baking pan with foil to catch the drippings, then place a rack on top.
Once the chicken is done marinating, start threading the pieces onto the skewer. If the piece of chicken is too long, make sure to thread it twice through the skewer. Once the skewer is full, place it over the rack. Repeat the process for the remaining chicken. Make sure to space them apart on the rack.
Place in a 450F preheated oven then roast for 15 minutes. After 15 minutes, flip the chicken over and roast for 5 more minutes. Next, broil for a minute or two.
Garnish with fresh parsley and serve.
