This baked cauliflower fries recipe by Food Wishes on YouTube is a low-carb snack and healthy. There are many keto-friendly or recipes that use cauliflower as a carb substitute, so I think this is an interesting way to make fries.  They would be a great midday snack or appetizer before a meal during dinner. Ingredients:

  • 2 head cauliflower (about 3 1/2 cups of cooked, squeezed-dry cauliflower)
  • 1 tablespoon kosher salt
  • 2 large eggs
  • about 1 cup shredded cheddar cheese
  • 1/4 cup packed finely grated Parmigiano-Reggiano
  • 4 cloves peeled garlic, crushed fine
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon cayenne
  • 1 tablespoon olive oil
  • more cheese to dust top

Directions:

First, break down the cauliflower into small pieces and add them to the food processor. Process them into fine pieces and transfer them to a saute pan. Cook over medium-high heat for about high heat. Next, once the cauliflower mixture has baked in the oven at 350 degrees for an hour, cool off completely before slicing. Add them to a baking sheet and brush with oil on top. Sprinkle cheese on top and bake at 400 degrees for 20-25 minutes.

Overall, I wouldn’t mind trying this healthy alternative. Although it may seem like a long process, I would try it out to see if it’s worth it. I love all types of fries because I would consider myself a fry connoisseur.
