Ingredients:

  • 3 medium to large carrots
  • 1 1/2 tbsp oil
  • 1/4 cup parmesan, grated
  • salt to taste
  • ground black pepper to taste
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp paprika

Dipping Sauce:

  • 4 tbsp mayonnaise
  • 2 tbsp chili sauce
  • 1 – 2 tbsp chopped parsley or chives

Directions:

Step 1

Preheat your oven to 400 degrees F and line your baking tray with parchment paper. Next, cut the top and bottom of the carrot, then cut it in half. Slice each half in half lengthwise, then slice each half into thirds. After this, transfer the sliced carrots to a bowl. Add 1 1/2 tbsp oil, salt, and ground black pepper to taste, 1 tsp garlic powder, 1/2 tsp paprika, 1 tsp oregano, and 1/4 cup grated parmesan cheese. Toss until the carrots are well coated.

Step 2

Trasfer the carrots to your prepared baking tray and arrange them across. Put them in a preheated 400 degrees F oven and bake them for fifteen to twenty minutes. While waiting, make the dipping sauce. In a small mixing bowl, combine 4 tbsp mayonnaise, 2 tbsp chili sauce, and 1 – 2 tbsp chopped parsley. Mix until well combined. Serve and enjoy!
