To start, preheat the oven to 350 degrees F and grease your casserole dish with some butter. After this, prep and cut your ingredients accordingly, then transfer the chopped yams to your prepared casserole dish. Next, add 1 cup dark brown sugar, 1/2 cup white sugar, 1 1/2 tsp cinnamon, 1/4 tsp nutmeg, 5 whole cloves of garlic, 1/2 cup orange juice, orange zest, 6 tbsp melted butter, and 1/4 tsp salt to a small saucepan.

Set the stove on medium heat and cook while stirring constantly for three to four minutes. After this, remove the saucepan from the heat and stir in 1 tsp vanilla extract. Now, pour the mixture over the yams and mix them well, making sure all the yams are coated properly. Cover the casserole dish with aluminum foil, place it in the middle rack, and bake for 30 minutes. After this, take the foil off and mix the yams with the sauce from the bottom. Bake uncovered for 25 minutes or until the yams are tender. After baking, garnish it with 1/3 cup chopped pecans and let it cool for a few minutes before serving.
