Preheat your oven to 380°F, then place a pan on a stove over medium heat, and drizzle some oil before adding the butter. Once melted, add the minced onion and garlic, toss and cook for about 3 minutes before adding the shredded chicken, then mix them together until well combined. Season them with cumin, black pepper, and chicken bouillon powder, then mix them until well combined, and add the frozen veggies and chopped potatoes. Give the ma good mix and let them cook for about 3 minutes over low heat, then set aside. In another pan, melt the butter over low heat, then add the chicken bouillon powder diluted in warm water, mix and bring to a boil before adding the heavy whipping cream.

Continue whisking and stirring the sauce, then raise the heat to medium once the cheese has melted, and add the hatch chiles or roasted peppers. Lay a piece of tortilla, then fill it with some of the chicken fillings, fold and wrap the sides, and roll it over. Place it on a baking dish, then repeat with the rest of the tortillas and chicken filling. Once done placing the burritos on the baking dish, pour the sauce mixture over them, then top it with cheese, and bake in the preheated oven for about 15 to 20 minutes or until nice and bubbly.
