For the Cupcake
Directions:
Prepare all the needed ingredients.
Preheat the oven to 320F.
Grease and flour two 8-inch tins.
In the mixing bowl of a padded mixer, combine caster sugar and unsalted butter. Beat the ingredients together until pale white and fluffy. Once ready, crack in 3 large eggs, mixing quite well between each one. When the mixture becomes silky smooth in consistency, sift in 150g of plain flour and 50g of self-rising flour. Fold the mixture gently.
In a small cup, add 1 tbsp of whole milk, ½ tsp of vanilla extract, and a blob of pink food color paste. Mix until everything is well combined. Once mixed in, pour it into the batter and mix through. Make sure to scrape all the sides and mix well. Add and level the batter mixture into the greased tins using a spatula.
Place the tins in the oven to bake for 20 minutes at 320F or until cooked all the way through.
Once baked, set them aside to cool.
When the cakes are cooled, take one and level off the top with a cake leveler. Using a heart-shaped cookie cutter, cut out 12 hearts from the cake. Set them aside.
For the cupcakes, mix together self-raising flour, baking powder, sugar, softened butter, and two large eggs in a bowl. Combine all the ingredients gradually up to the minimum speed. Combine 1.5 tbsp of whole milk and ¼ tsp of vanilla extract in a small cup. Once combined, add it to the mixture and mix for about 30 seconds. Stir the sides of the bowl and mix with the batter.
Line cupcake liners in a cupcake tray and scoop a spoonful of the batter into each liner. Grab one of the heart cakes and push it into the middle of the cupcake batter. Repeat with the rest of the cupcakes. Place the cupcakes in the oven to bake for 18–20 minutes at 338°F.
When done, let the cupcakes cool completely while you make some vanilla buttercream icing. Place the buttercream in a piping bag and squeeze some out on top of the cupcakes. Lastly, decorate with heart-shaped shape toppers.
Serve and have fun!
