Step 1
Preheat your oven to 200°C or 390°F. Lay out the bacon strips vertically beside and slightly overlapping each other on a board, make sure that the amount of bacon laying is enough to cover the whole length of your pork. Next, season the pork with some salt and pepper, then fold and tuck the thin end of the meat underneath the pork so that it has roughly the same size from end to end. Place an oven-proof skillet pan on a stove over high heat, then heat up some oil and add the seasoned pork. Sear it well on all sides until nice and brown. Turn off the heat, then remove the pork, and allow it to cool until it’s enough to handle.

Step 2
Transfer the pork on top of the assembled bacon strips and place it at the end closest to yours, then carefully roll the pork until fully wrapped with the bacon strips, and finish with the seam side down. Transfer the meat back into the pan, then drizzle the honey all over the wrapped pork, and brush it so that all sides are covered with honey. Put in the preheated oven and roast for about 25 minutes or until the internal temperature reaches 65°C or 149°F, then baste the pork with the pan juices once it reaches the 20-minute mark, and mop up the honey and juices pooled n the pan. Once done roasting, remove it from the oven, then let it rest for about 5 minutes, and baste it one more time before serving. Cut it into thick slices, then serve together with the remaining pan juices, and enjoy!
