The awesome flavor of onion and maple bacon go perfectly with beer, or can even be a great condiment to serve on the side of a waffle for a fancy brunch idea. - 1 1/2 pound of bacon (cooked until crispy, and chopped finely)
- 2 teaspoons of butter
- 2 teaspoons of reserved bacon fat
- 4 large onions (chopped finely)
- 1 teaspoon of salt (more or less to taste)
- 1/4 cup of brown sugar
- 1/4 cup of sherry vinegar
- 1 1/2 teaspoon of fresh thyme (1 cooked in, 1 at the end)
- 1 teaspoon of freshly ground black pepper
- pinch of cayenne
- 1/2 cup of water
- 2 teaspoons of balsamic vinegar
- 2 teaspoons of olive oil
