Bacon and eggs are delicious no matter how you cook them, but after seeing this recipe by The Pit Boys on Youtube, you are going to be wanting to try this new idea. The bacon is partially cooked and rolled up into rosettes, then you add eggs, onion, salt, and freshly cracked black pepper in a cast-iron skillet. You then, cook the bacon and egg pie in either the oven or on the Bar BQ pit till almost done. The kicker to this bacon pan pie recipe, is that you pull your pan out of the oven and cover your bacon and eggs with a fifty-fifty mixture of crushed potato chips and cheese, then bake until the cheese is melted and bubbling. I just love the Pit Boys and they made this bacon and egg recipe look extra delicious by cooking it outside in the woods using their fabulous collection of cast iron cookware on a smoky pit, so delicious!

Ingredients:

  • 2 pounds of bacon
  • 18 to 24 eggs
  • Oil (or butter)
  • 4 cups grated cheddar cheese (or your favorite cheese, any cheese will work, parmesan is good)
  • 1 large white onion (diced)
  • 2 cups potato chips
  • Freshly ground cracked pepper

Directions:

In this wonderful video, you will learn how to add the bacon, eggs, onions, salt, and freshly cracked pepper to your skillet then cook till almost done.
