Last week, while running some errands I got hungry and ended up eating at a restaurant that serves middle eastern cuisine, I ordered some shawarma, probably one of my favorite food ever. After I was done eating, I thought to myself that I haven’t tried making shawarma before and whether that would be an easy process considering it is a just wrap. However, even if assembling it would be quite easy, I wanted the taste to come as close to the authentic ones as possible. So, what I did when I got home is to browse the internet as always and look for the best and fitting tutorial I could find. Lucky enough, it didn’t take me long to find this amazing channel on YouTube named Recipes of the world. Though it was my first time making these, I was incredibly happy with the successful outcome. I loved it, so does my family, and they even want to have them again! So, I guess I’ll probably make shawarma again soon.

Ingredients:

Chicken Marinade

  • 2 Chicken fillets
  • ½ cup Yogurt
  • 1 tsp Salt  or to taste
  • 2 tsp Red chili powder
  • 1 tsp Onion powder (optional)
  • 1 tsp Cumin powder
  • ½ tsp Turmeric powder
  • 1 tsp Black pepper powder
  • 1 tsp Garlic powder
  • 1 tsp Dry coriander powder
  • ½ tsp Cinnamon powder
  • ½ tsp Red chili flakes
  • 1-2 tbsp Lemon juice
  • 1 tbsp Olive oil

Shawarma sauce

  • 2 tbsp Sesame seeds (white til)
  •  4-5 cloves Garlic
  • 1 tbsp Vinegar
  • 1 tbsp Lemon juice
  • ½ cup Mayonnaise
  • ¼ tsp Salt
  • ¼ tsp Black pepper powder
  • ¼ tsp Oregano
  • 1-2 tbsp Olive oil

Assembling

  • 1 cup Bell peppers, sliced
  • ½ cup Onion, sliced
  • Lettuce/Chinese Cabbage, sliced
  • Pickles
  • Tortilla
  • Chili garlic sauce
  • Butter, as required

Directions:

Step 1

Slice the chicken fillets thinly then set them aside. In a large bowl, combine the yogurt, salt, red chili powder, turmeric powder, onion powder, garlic powder, cumin powder, dry coriander powder, black pepper powder, cinnamon powder, red chili flakes, lemon juice, and olive oil. Whisk and mix the ingredients until incorporated. Place the chicken fillets and mix them until fully coated the seasoning mixture, cover and marinate for 2-3 hours.

Step 2

Using a food processor, combine the sesame seeds, garlic cloves, vinegar, lemon juice, mayonnaise, salt, black pepper, oregano, and olive oil, blend until smooth. Brush the grill pan with oil, then fry the marinated chicken fillets, flip occasionally to cook both sides. Slice the cooked chicken into smaller pieces. Oil the grill pan again, then put the sliced bell pepper and onion, mix well and cook for 2-3 minutes, then transfer to plate.

Step 3

Place the tortilla on a flat surface or plate, then spread the top with chili garlic sauce. Add half of the shawarma sauce, French fries, lettuce/Chinese cabbage, sautéed bell pepper and onion, pickles, cooked chicken, and the remaining shawarma sauce. Wrap and fold the tortilla, then grill it on a buttered grill pan for 2-3 minutes on each side until done, butter as needed. Cut in half then serve.
