I’ve been craving Applebee’s signature bourbon street chicken and shrimp dish. I searched far and wide for the best copy-cat dish that I could easily make at home for a delicious weeknight dinner. ThatGirlCanCook! on Youtube provided the best solution for my cravings. No doubt, one of the best recipes I’ve ever followed.
Ingredients:
Whipped garlic mashed potatoes
Chicken
Shrimp
Onions & mushrooms
Cajun butter (optional)
Directions:
Prepare all the needed ingredients according to the list stated.
Season the chicken meat in a large bowl with 1 tbsp of olive oil, 1 tbsp of Worcestershire sauce, 1 tbsp of dried thyme, 1 tbsp of black pepper, 1 tbsp of smoked paprika, 1 tbsp of garlic powder, and 1 tbsp of Cajun seasoning. And ¼ cup of bourbon. Combine all the ingredients until the chicken breasts are well incorporated. Set aside.
In a separate bowl, season ½ lb of Jumbo shrimp with 1 tbsp olive oil, 1 tsp old bay seasoning, 1 tsp garlic powder, ½ tsp of black pepper, ½ tsp of dried thyme, and 1-2 tbsp off bourbon. Combine all the ingredients until the chicken breasts are well incorporated. Set aside.
In a heated pan, add 3 cups of chicken broth, 2 cups of water, kosher salt, and 2 tsp of minced garlic. Cook until it starts to boil, and add in 1.5 lb of red potatoes. Continue to simmer until the potatoes are fork-tender.
Once the potatoes are cooked, remove them from the heat and strain. Reserve a cup of broth.
Place the strained potatoes back in the pan and add 1 cup of heavy whipping cream and 1 tbsp of butter. Mash the potatoes and combine them with the whipped cream mixture. Blend the mashed potatoes together until smooth and creamy. Then, add ¼ cup of the broth or cream. Season the potatoes with black pepper to taste and 1-2 tsp of salt. Blend until well combined.
Place a pan over medium heat and grease it with butter. Then, add in the chopped onions and mushrooms. Sauté until the onions and mushrooms are softened and browned. Season with salt and pepper to taste. Remove the onions and mushrooms from the pan and set them aside. Add in the seasoned chicken breasts and sear for about 5-7 minutes per side in the same pan.
Brush or add some Cajun butter on top of the chicken. Remove the chickens from the heat and set them aside when they are fully cooked.
In the same pan, add the seasoned shrimp and flip each piece after about a minute of searing on each side. Remove from heat and set aside once cooked.
To assemble the whole dish, you will need a large plate. Add a scoop of mashed potatoes, some Cajun butter, one of the chicken breasts, the shrimp, onions, and mushrooms. Garnish with parsley if desired.
