Start by cutting the apples in half, then cut them again in half. Thinly slice the apples using a mandoline.
Add them to a microwave safe bowl of water, then squeeze 1 lemon and add 1/3 cup of sugar. Mix everything then microwave for about 3 minutes. Once done, let it cool for a few minutes.
Lay your puff pastry flat, then cut it into wide strips.
Get one strip and brush it with apple butter. Take one apple slice and place on the end of the strip with the curve part slightly over the edge. Add another one slightly overlapping the first one. Repeat until you reach the other end. Fold the bottom part of the pastry, covering the apples. Gently roll it up and place on a greased muffin pan. Repeat with the remaining strips.
Sprinkle each one with cinnamon sugar mixture on top. Place in a 350F preheated oven and bake for 15 minutes.
Once done baking, transfer to a plate and lightly sprinkle powdered sugar on top.
