Also, the crisp from the fresh apples with cinnamon and coconut toppings adds a crunchy texture to the cake. I love how this apple cake reminds me of the Hostess cinnamon streusel because of the sugar-cinnamon crumble. It adds an overall sweetness to the cake.



  • 1 and 1/2 cups plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup sugar
  • 1.5 cup chopped red apple
  • 2 eggs
  • 2 teaspoon vanilla extract
  • 1/2 cup vegetable oil
  • 1/2 cup yogurt
  • 3/4 cup brown sugar
  • 1/3 cup coconut
  • 3 tablespoons butter
  • 1 teaspoon cinnamon


First, preheat the oven at 350F. In a bowl, mix all of your cake batter ingredients and whisk until everything is combined. Then, make your apple cake cinnamon coconut topping with cinnamon, coconut, brown sugar, and butter.

Next, transfer your apple cake batter in a greased round cake tin. Add the chopped apple on top and sprinkle over the cake batter. Bake the cake for about 30-35 minutes or until the skewer inserted in the middle comes clean.

Overall, this is such an easy recipe that I need to add to my list because I am constantly given apples to bake. My dad is obsessed with apple baked goods, and this recipe would give me a reason to bake something new. Also, I like how this is just a mixture of all the ingredients without any complicated steps. You can make this all in one bowl.
