After watching this mouth-watering onion soup video tutorial by Food Wishes on YouTube, I immediately knew that I have to give it a try. It was so delicious that my family even requested I make it often, they just can’t get enough of it!
Step 1
Preheat your oven to 425°F, then place a large oven-safe skillet on a stove over medium heat, and let about ¼ cup of butter melt. Add the onions, then stir them around until evenly coated with butter. Put the skillet into the preheated oven, then let the onions cook for about 1 hour or until they are browned and tender while stirring occasionally. Transfer the skillet to a stovetop, then continue cooking the onions and stir over medium heat for about 5 more minutes until they start to brown and stick to the bottom of the pan. Pour sherry and vinegar into the pan, and bring it to a boil while scraping the browned bits at the bottom of the pan.

Step 2
Transfer the caramelized onions to a large soup pot, then add the chicken and beef broth, as well as the thyme, and bring it to a boil. Remove any foam or fat that appears on top, then reduce your heat to low, and let it simmer for about an hour before you season it with salt and pepper. Preheat your oven’s broiler, then set the oven rack about 6 inches from the heat source. Brush your bread slices with melted butter generously, then place it on a baking sheet, and broil for 5 minutes or until crispy and golden. Transfer the soup into heat-proof bowls, then top each bowl with a piece of toasted bread, and sprinkle the top with 2 to 3 tablespoons of cheese. Broil the bowls of soup for about 5 to 6 minutes or until golden and bubbly.
