I love American flag cakes because they include the top two of my favorite fruits: strawberries and blueberries. I love the simple look of the cake, and I’ve always wanted to make these but never have. Not a lot of my family members like sweets, so I’ll be left with a ton of cake left. This American flag cake is great for large gatherings or a get together after shooting fireworks on a nice barbeque dinner night. This type of cake isn’t heavy or too filling where you’ll feel gross after eating. Ingredients:

Cake:

  • Vanilla Sponge cake: (Makes one-half sheet 18” x 13” or two quarter sheet layers 9” x 13”)
  • 3 cups (375g) all-purpose flour
  • 1/3 cup (40g) Corn starch
  • 1 tsp baking soda
  • 1 tsp Salt
  • 7 large eggs – at room temperature
  • 1 cup (226g) Unsalted Butter – at room temperature
  • 2 1/2 cups (500g) Sugar
  • 1 1/2 tsp Vanilla Extract
  • 1 cup (225g) Sour cream/ Greek yogurt
  • 2 lbs strawberry (divided – sliced and halved)
  • 1-pint blueberry

Mascarpone Whipped Cream Frosting :

  • 3 cups heavy whipping cream
  • 1 1/2 cups (165g) Confectioners sugar
  • 2 cups (16oz/453g) Mascarpone cheese
  • 2 tsp pure vanilla extract

First, preheat oven to 350 degrees. mix and get your cake batter ready.

Next, once the cake is ready and cool for an hour, divide the cake into 2 layers or keep it a single cake. Assemble the cake on a serving platter. Spread the whipped cream filling smooth and evenly then add the fresh fruits. Add another thin layer of whipped cream on fruits and place the second layer on top.
