  • 1 cup warm milk
  • 1 large egg
  • 1/4 cup sugar
  • 1 tsp salt
  • 3 & 1/4cup all-purpose flour (or 3 cups bread flour)
  • 2 & 1/4 tsp instant yeast
  • 1/4 cup butter, unsalted and softened
  • sliced almonds, for the top

Almond Cream:

  • 1/2 cup salted butter, room temperature
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup almond flour


Step 1

First, make the almond cream. In a large bowl, add 1/2 cup softened salted butter and 1/2 cup sugar. Mix until light and fluffy. Add two eggs (one at a time) and 1 tsp vanilla. Continue mixing, then add 1 cup of almond flour. Once combined, set it aside and chill in the fridge. Meanwhile, make the dough. Add 1 cup warm milk, one egg, 1/4 cup sugar, and 1 tsp salt in a large mixing bowl. Mix well, then add 3 & 1/4 cups all-purpose flour and 2 & 1/4 tsp instant yeast. Continue mixing it until you form a dough, then cover it and allow it to rest for 20 minutes.

Step 2

After an hour, add 1/4 cup of softened butter and mix it until the butter is fully combined. Transfer the dough to a floured surface and knead, slap, and fold it until smooth and elastic. Then, coat the dough with oil and cover it for one hour to double its size. After an hour, deflate the dough by punching out the gas. Transfer the dough to a surface and roll it to a rectangular shape.

Step 3

Spread the almond cream over the dough’s surface, roll it as tightly as possible, then pinch the seams to seal. Now, cut it lengthwise, braid using a two-strand method, then fold both ends. Gently transfer it to a loaf pan and cover for 30 minutes. After 30 minutes, brush the dough with eggwash or milk, then top it with sliced almonds. Bake in a preheated oven at 350 degrees F for 25 to 30 minutes.
