Ingredients:

  • bacon strips
  • 1/4 cup of mayonnaise
  • 1/2 cup of honey
  • 1/2 cup of stone ground Dijon mustard
  • chicken tenders
  • salt and pepper to taste
  • 1 tablespoon and 2 tablespoons of butter
  • 1 medium yellow onion (chopped)
  • grated cheese

Instructions:

Step 1:

Preheat the oven to 425 degrees F.

Step 2:

Line a pan with parchment paper, then lay the bacon strips. Place in the oven and bake for 15 to 18 minutes until crispy.

Step 3:

Make the sauce marinade. In a small bowl, combine 1/4 cup of mayonnaise, 1/2 cup of honey, and 1/2 cup of stone ground Dijon mustard. Mix using a whisk until well combined.

Step 4:

Remove the crispy bacon strips and place them on a paper towel to remove excess grease.

Step 5:

Season the chicken tenders on both sides with salt and pepper. Spoon half of the sauce over the chicken and spread until all are coated. Let them sit for about 5 minutes.

Step 6:

In a skillet over medium heat, put 1 tablespoon of butter and let it melt. Once the butter is melted, add the chopped onion and season with salt. Cook for about 3 to 4 minutes until browned and softened. After that, set them aside.

Step 7:

Add 2 tablespoons of butter to the pan and let it melt. Place the chicken in a single layer and let it cook for 3 to 4 minutes on each side.

Step 8:

Preheat the oven to 400 degrees F.

Step 9:

Spray your casserole dish with non-stick cooking spray and place the cooked chicken in a single layer. Spoon the remaining sauce into the chicken and top with the sauteed onions. Next, place the crispy bacon and sprinkle some grated cheese.
