
Don’t want to spend a lot of time in the kitchen but still want a nutritious meal? Try this air fryer sausage and vegetables recipe by Cooking with Coit on YouTube. This is the perfect dish if you have a busy schedule. It’s tasty, easy to make, and good for you.
Ingredients
- 1 lb of sausage (chicken or pork)
- 2 cups of potatoes (quartered and cut thin)
- 1 large red bell pepper (cut into 1-inch pieces)
- 1 large orange bell pepper (cut into 1-inch pieces)
- 1/2 large red onion (cut into 1-inch pieces)
- 1 medium zucchini (cut into 1 inch half moon shapes)
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1/2 teaspoon of oregano
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
Note: For the potatoes, you can either use yukon gold or russet potatoes

Instructions
Step 1:
Prepare all ingredients by cutting the vegetables and sausages. Make sure the potato pieces are not larger than 1/2″ thick.
Step 2:
In a large mixing bowl, add the ingredients you prepared – sausages, potatoes, red bell pepper, orange red bell pepper, red onion, and zucchini. Next, drizzle 1 tablespoon of olive oil. This will help the seasonings to stick to the vegetables. Season with garlic powder, onion powder, oregano, dried thyme, salt and pepper. Toss all ingredients together, making sure everything is well seasoned.
Step 3:
Transfer all of the seasoned sausages and vegetables into the air fryer basket. Set the temperature to 375F and cook for 13 to 16 minutes, tossing halfway through the cooking time.
Step 4:
Once they are cooked, remove from the basket and serve with a side of white or brown rice. Enjoy while warm!
