To start, cut the large onion into 1/2″ thick slices, then separate the layers into rings. Set them aside. Next, grab three bowls for the breading. Combine 1/2 cup of flour, 1 tsp paprika, and 1 tsp salt in the first bowl. In the second bowl, add 2 large eggs, whisk, then stir in 2/3 cup of buttermilk. In the final bowl, add 2 cups of Panko breadcrumbs mixed with 2 tbsp olive oil.
Now, dredge one onion ring into the flour mixture first, then into the buttermilk mixture, back into the flour mixture, then into the buttermilk again, and lastly, into the breadcrumbs. Place it into a baking sheet. Repeat these steps for the rest of the onion rings. Set your air fryer to 350 degrees F, then place the onion rings in the basket greased with nonstick cooking spray. Cook them for 12 minutes, flipping them at the six-minute mark. Serve with your favorite dipping sauce.
