Jalapeno poppers are so delicious and easy to make, but make them in an air fryer and they are beyond easy. These stuffed jalapeno poppers only take five to six minutes in the air fryer. The rotisserie chicken filling is my favorite part of this popper recipe and tastes so much like the poppers I have had in Mexico. These are a great snack for a movie marathon or to feed to impromptu guests. They take hardly any time to make so they are always a great choice.

Ingredients:

  • 12 medium jalapenos
  • 8ounces cream cheese (at room temperature)
  • 1/3 cup shredded cheddar cheese
  • 4 ounces of rotisserie chicken (shredded or chopped)
  • 1/2 teaspoon Himalayan pink salt
  • 1/4 teaspoon black freshly cracked pepper

These poppers remind me so much of our many trips to Mexico, we would sit on the beach and drink beer and eat poppers every day for lunch in Cancun. When I taste or smell a popper, I immediately hear the surf and feel the salty breeze in my hair. I love all these memories that poppers bring to me.
