This stuffed potato recipe has been a new favorite dish of mine since last year. I found this while looking for potato recipes I can make using an air-fryer, I tried a bunch of them but nothing is like this one which is made by Mae’s Kitchen and Living on YouTube. What I love about it is its simple directions, it also doesn’t use much seasoning and you can substitute other ingredients with what you have available or you can use leftovers.
Toppings
Step 1
Clean the potatoes and remove all dirt (do not peel off the skin). Using a fork, prick all over the potatoes, drizzle with olive oil and sprinkle with salt, then rub them well until the potatoes are evenly coated. Place them on the air fryer at 180 degrees for 38 minutes or bake them in the oven at 200°C until soft. Flip the potatoes in between to cook both sides evenly.

Step 2
Make a slit on top of each potato, use a fork to poke and fluff the inside, spread it open a little bit. Top it with chopped ham or any toppings you prefer (you can use turkey, ground beef, shredded chicken, bacon, pepperoni, etc.). Add chopped spring onion and shredded mozzarella and cheddar cheese on top, put more ham or toppings. Put them back in the oiled air fryer, then fry or bake them again until the cheese has melted and turned golden brown.
