This Thanksgiving leftover turkey ball is a lifesaver when there are a lot of leftovers that you are trying to get rid up but do not want to waste. This recipe by Home of The Holidays on YouTube has a combination of leftover turkey, stuffing, and mashed potatoes. I think it’s an interesting idea to repurpose some of the Thanksgiving sides into a crispy fried ball. Plus, I would love to make these leftover bites after I get tired of eating them as a meal. Ingredients:

  • 2 cups stuffing, broken into small-sized pieces
  • 1 cup leftover finely chopped turkey
  • 3/4 cup shredded Gruyère cheese
  • 3 tablespoons minced fresh parsley, plus extra for garnish
  • 4 to 5 cups cold mashed potatoes
  • 1 cup all-purpose flour
  • 1 large egg, whisked
  • 2 cups panko bread crumbs
  • 2 cups peanut oil
  • 1-1/2 cups hot turkey gravy for dipping

Directions:

First, in a large bowl, combine turkey, cheese, stuffing, and parsley. Mix until combined. Then, line two baking sheets with parchment paper, and form balls with the stuffing mixture. Put the leftover bites to set in the freezer for about 30 minutes.
