This parmesan-crusted asparagus recipe by Kelly’s Cookin’ on YouTube is a quick and simple recipe for a midday healthy snack alternative. These air fryer asparagus still gives off the crispy texture. Also, it’s a great way to get your kids or anyone that struggles to eat vegetables, to eat more. I love vegetables, so this is a great way to switch up recipes and cook them rather than boiling or sauteing them. Plus, it’s quick to throw them into the air fryer and it’s done. There wouldn’t be any pans to wash afterward either. The asparagus is a great side dish to go along with your lunch or dinner meal. Plus, you can make your own dipping sauce or dip them into the ranch. I never thought about breading them, but they remind me of air fryer green beans.

Ingredients:

  • asparagus
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1/2 cup bread crumbs or panko
  • parmesan cheese
  • olive oil

Directions:

First, start off by cutting off the ends of the asparagus by breaking it off with your hands or a knife. Then, get the flour, eggs, and bread crumbs ready in separate bowls to assemble.

Next, add the breaded asparagus to the air fryer and spray with olive oil. Set the air fryer to 400F, and start with 10 minutes. Check on them halfway through, and continue to cook until golden brown.

Overall, I love healthy vegetable snacks that still have a fried taste like french fries. French fries aren’t necessarily bad for you, but I prefer them in an air fryer instead of dreaded and fried in oil. I think I would add more seasoning to the bread crumbs and flour mixture. I love a lot of spices in my breading because it adds more flavor such as paprika, cayenne pepper, and garlic powder.
