This Fritos pie casserole by Catherine’s Plates can be made using one-pot, and it’s an easy recipe to follow along with. If you want to have a little Tex-Mex dinner, this casserole has a lot of those flavors. You’ll be guaranteed with leftovers for the rest of the week, and it would still taste delicious if you throw it back in the oven. I’ve never seen a recipe made with Fritos chips, so I think it would be cool to see how it would taste with the rest of the ingredients. Normally, I would eat Fritos chips with chili.
First, preheat the oven to 350F. In a large skillet, heat oil on medium-high heat. Cook the onions until they become translucent. Then, add the ground beef and cook until brown. Once the meat is cooked, drain out any excess grease.
Next, add taco seasoning, corn, green chilis, diced tomatoes, sour cream, and salsa. Stir until everything is combined. In a 9 x 12 baking dish, place 1/2 of the meat mixture into the pan and top it off with 1/2 of the Fritos chip. Sprinkle cheese over the top and repeat for the second layer. Bake in the oven for 15-20 minutes.
Overall, this is a great recipe if you are looking for different casserole dishes to make for dinner. It’s loaded with nutritional ingredients and it’s a colorful dish. Also, it’s a filling meal that would keep you full.
