Making this cake is pretty easy and convenient especially if you don’t have an oven because what you can use instead is your crockpot! The ingredients are mainly a combination of different fruits which helps pack the cake with so many flavors. Learn this easy recipe now by watching the video tutorial below.
Step 1
In a large bowl, add all the fruits and give them a good mix, then add the orange zest and juice followed by the tea, and mix them to combine. Cover the bowl with plastic wrap, then set it aside, and let it soak overnight.
Step 2
Once ready, add the sugar and butter to a large bowl, then beat them until creamy and combined, add the eggs, and beat well to incorporate. Add the flour, spices, and vanilla bean paste, then fold them together until well combined, and mix in the soaked fruit including the juices.
Step 3
Grease a 7 or 8-inch round silicone pan, then line it with 2 layers of parchment paper, and then place a saucer or small tin upside down on your crockpot. Transfer the cake batter onto the prepared silicone pan spreading it out smoothly, and then pour some water around the sides of your crockpot.
Step 4
Now, place the silicone pan on top of the saucer, then place a clean tea towel under your crockpot’s lid before covering the cake, and set the crockpot to a high setting for about 3 to 4 hours.
Step 5
After a couple of hours and the top of the cake is firm or a toothpick inserted at the center comes out clean, you can remove the cake from the crockpot, then let it completely, and decorate it as desired. Serve and enjoy!
