Still don’t know what dessert to prepare for Christmas? Here’s a Christmas layered jello salad recipe from Ashlee Marie! It’s a festive dessert with three layers–shortbread with pecans, creamy lime, and strawberry jello. They all have different textures and flavors that pair well together.

It’s the perfect dessert for Christmas, but you can also make it all year round. You can even change the flavors of the Jello if you want to. It’s super easy and fun to make–you will absolutely love it!

Shortbread crust

Make the crust. In a large mixing bowl, add butter, flour, and brown sugar. Beat until well crumbly.
Add the pecans and mix until well incorporated. Transfer the mixture to a 9×13 pan and press it down for a thin crust. Bake it for 12 to 15 minutes at 375F. Once done baking, let it cool.
Make the middle layer. In a measuring cup, add 1 cup of boiling water and 3 oz lime Jell-O packet. Stir until dissolved. Set it aside and let it cool down a little bit.
In a bowl, add the cream cheese and powdered sugar. Beat until well combined. Pour the gelatin and blend together, making sure to scrape the sides.
Add whipping cream to a bowl and beat until stiff peaks. Transfer to the mixture and mix until well combined. Pour into the crust. Refrigerate until it’s completely firm.
Once the middle layer is set, make the final layer. In a measuring cup, add the boiling water and strawberry Jell-O. Whisk to combine. Add the ice and mix until completely dissolved. Let it cool for a few minutes, pour it over the middle layer.
Refrigerate until set. Slice into squares. Serve and enjoy!
