I never knew you could use sweet potatoes to make brownies until I saw this recipe on YouTube. Surprisingly, they can give the same texture as your usual brownie recipe that includes flour, eggs, and sugar.

To make these sweet potato brownies, you will need sweet potatoes, coconut oil, unsweetened almond butter, cocoa powder, maple syrup, salt, and vegan chocolate chips. They are gluten-free, dairy-free, and do not contain any refined sugars. Making these guilt-free treats is super easy, especially if you have a blender, so make sure you try them.

Cut the sweet potatoes into bug chunks, then place them on a baking sheet lined with parchment paper. Drizzle some coconut oil. Place them in the oven and bake at 400F for 30 to 40 minutes.
Once done baking, set aside until they are cool enough to handle. Peel the skin and you should get about 1 1/2 cup of sweet potatoes.
In a blender, add 1 1/2 cups of sweet potatoes, unsweetened almond butter, cocoa powder, maple syrup, and a pinch of salt. Blend until well combined and smooth. Fold in 1/2 cup of vegan chocolate chips.
Preheat your oven to 350F.
Line a baking pan with parchment paper. Transfer the mixture and spread evenly until smooth.
Sprinkle vegan chocolate chips on top.
Place in the preheated oven and bake for 25 to 30 minutes. Once done baking, remove it from the oven and let it cool before slicing.
Cut into squares. Serve and enjoy!
