It’s very easy to prepare and it would be a great treat to serve at parties or even give as a gift. If you also want to take your version of these soft and chewy spice cookies to the next level, then feel free to modify the ingredients to your preference or add more toppings as you like.
Step 1
Preheat your oven to 350°F, then line 2 cookie sheets with parchment paper, and set them aside. In a large mixing bowl, add the flour, ground ginger, baking soda, cinnamon, and salt, then whisk them together until uniform, and set them aside.
Step 2
In a separate bowl, add the butter and sugar, then beat them until creamy and combined, add the egg and molasses, and continue beating until incorporated.
Step 3
Gradually add the flour while mixing continuously to combine, then place the batter in the refrigerator, and let it chill for an hour. In a small bowl, mix together the sugar and cinnamon until uniform, the scoop the batter using a small ice cream scooper, and roll into a ball.
Step 4
Roll the ball in the sugar mixture, then place it into the prepared cookie sheets, and continue to roll the remaining batter making sure to space them apart evenly, at least 2 inches. Place them in the preheated oven, then let them bake for about 10 minutes, and serve. Enjoy!
