Step 1: Caramel
Place a saucepan on a stove over medium heat, then add the sugar, and stir it as little as possible as you let it melt completely. Add the butter, then mix it in until melted, pour in the heavy cream, and keep mixing until combined. Turn off the heat, then stir in the salt, and set it aside to cool completely, you can also skip this step and just use a store-bought caramel instead.
Step 2: Filling
In a food processor, add the pecans, dark brown sugar, cinnamon powder, salt, and softened butter, then process them until fully combined, and set the mixture aside.
Step 3: Dough
In a large mixing bowl, add the milk, egg, sugar, and instant yeast, then whisk them until combined, add the flour and salt, and fold them until dough forms. Add the melted butter, then knead until fully absorbed and elastic, and then smooth it into a ball. Leave it in the bowl, then cover, and set it aside for about 1 hour or until double in size.
Step 4: Assembling the Rolls
Punch the air out of the dough to degas, then transfer it to a floured counter, and roll it out. Flip it over so the smooth side is facing down, then roll it into a rectangle with 1/3 inch thickness, and trim the edges for a neat finish if you like. Spread the filling evenly on top, then cut it into strips at 2 inches each, and roll each strip. Place the rolls in a greased 9×9-inch baking pan lined with parchment paper, then cover it, and set it aside for about 30 to 40 minutes.
Step 5: Baking
Preheat your oven to 170°C or 340°F 15 minutes before you start baking, then pour ½ cup of cream cheese all over the proofed rolls, and place them in the oven to bake for about 25 minutes or until the top is lightly golden. Let it cool down a bit, then in a larger mixing bowl, beat the cream cheese until softened, add the powdered sugar, butter, and cream, and keep beating until light and fluffy. Frost the baked rolls with it, then drizzle the caramel sauce on top and garnish it with chopped pecans. Serve and enjoy!
