Instead of serving the usual stuffed bell peppers for your Halloween party or mealtime, try turning them into jack-o-lanterns! They taste just as good as other stuffed bell peppers you’ve tried but they fit the theme of the day more and I’m sure they will add some spooky vibe to your table, but not spooky enough to scare away the guests.

This is a very easy and effortless Halloween-themed food that would only take a few minutes. You can also make this using other colors of bell peppers, but orange would look best. Step 1
Preheat your oven to 375°F. Grease a 9×13-inch baking dish with nonstick cooking spray and set it aside. Fill a large pot with water about halfway full, place it on a stove over high heat, and bring it to a boil. Meanwhile, pour the water and chicken broth into a medium-sized pot, then place it on a stove over medium-high heat, and bring it to a boil.
Step 2
Add the rice, then turn the heat to low, place the lid on the pot, and let it cook for about 20 minutes. Turn off the heat, fluff the rice, and set it aside while preparing the bell peppers. Wash the bell peppers and pat them dry, then remove the insides, and cut out the eyes, nose, and mouth as demonstrated in the video.
Step 3
Place the peppers in the boiling water, then let them cook for about 5 minutes to soften, and turn off the heat. Transfer the bell peppers to a plate lined with paper towels to drain off the excess moisture, then in a large mixing bowl, add the chicken, rice, tomatoes, green chiles, chicken broth, taco seasoning, cheese, salt, and pepper, and mix everything until well combined.
Step 4
Put some of the chicken mixture at the bottom of the prepared baking dish, then spread it in an even layer, and use the remaining chicken mixture to fill each bell pepper evenly. Put the top of the bell peppers back in place, then place the bell peppers in the baking dish, and then put them in the preheated oven. Allow them to bake for about 15 to 20 minutes or until heated through and the cheese has melted, then serve, and enjoy!
