Easy Classic Peanut Brittle Ingredients

  • 1 cup of granulated sugar
  • 1/2 cup of light corn syrup
  • 1/4 cup of water
  • 1/4 teaspoon of salt
  • 1 cup of lightly salted dry roasted peanuts
  • 2 tablespoons of unsalted butter (cubed)
  • 1 1/2 teaspoons of pure vanilla extract
  • 1/2 teaspoon of baking soda

How to Make Old-Fashioned Peanut Brittle

Step 1:

Start by lightly and evenly greasing a jelly roll pan with butter. Set it aside for later.

Step 2:

Prepare the butter, peanuts, baking soda, and vanilla extract before starting as you need to move quickly once the candy reaches a certain temperature.

Step 3:

In a medium-sized heavy-bottomed saucepan over medium heat, add sugar, water, corn syrup, and salt. Stir occasionally. Use a damp pastry brush to wipe any sugar crystals from the sides of the saucepan. Cook until the sugar is dissolved and the mixture comes to a boil. It will take about 10 minutes or more. Do not rush the process by turning up the heat.

Step 4:

Once it comes to a boil, attach the candy thermometer. It should not touch the bottom of the pan. Stir occasionally until it reaches 250F.

Step 5:

Add the peanuts and continuously stir until it reaches 305F, then remove from heat. Immediately add butter, baking soda, and vanilla. Stir until well incorporated.

Step 6:

Pour the mixture into the prepared jelly roll pan. Use two forks to pull the brittle apart and spread it evenly. Be extra careful. Use an oven mitt if needed.
