  • 2 cups of powdered sugar (sifted)
  • 1/4 teaspoon of cream of tartar
  • 1 can of sweetened condensed milk
  • 1/2 teaspoon of vanilla essence
  • 3 1/2 cups of desiccated coconut
  • 3 to 4 drops of red food coloring

How to Make Coconut Ice

Step 1:

In a large bowl, add 2 cups of powdered sugar, 1/4 teaspoon of cream of tartar, 1/2 teaspoon of vanilla essence, and 1 can of sweetened condensed milk. Stir everything together to combine. It will turn into a thick mixture.

Step 2:

Add 3 1/2 cups of desiccated coconut to the mixture. Stir until well incorporated. You can also use your hands to make the process easier.

Step 3:

Divide the mixture in half and place in two different containers.

Step 4:

Add a few drops of red food coloring to one bowl, then mix until it becomes pink. It will be very thick. Use your hands to make the process easier.

Step 5:

Prepare a baking pan by greasing it with cooking spray then placing a parchment paper on top. Transfer the white mixture first and spread it with your hands. Press it as evenly as possible. You can use the bottom of a flat glass to push it down. Next, add the pink mixture and spread it evenly like with the white mixture.

Step 6:

Place it in the fridge for 2 hours. Once chilled, slice into squares and serve. Enjoy!
