These oatmeal muffins are light, healthy, and delicious snacks you can easily grab in the morning or afternoon and pair with a cup of coffee or tea. The recipe is easy to follow and only requires simple ingredients from your pantry – rolled oats, baking powder, cinnamon, ground nutmeg, kosher salt, banana, eggs, almond milk, and chocolate chips.
If you have ripe bananas that you have forgotten about, this recipe is the best way to use them.
Start by preheating your oven to 350F, then greasing a 12-cup muffin tin with cooking spray, coconut oil, or butter.
In a large bowl, add oats, baking powder, cinnamon, nutmeg, and salt. Mix to combine.
In a separate bowl, add mashed bananas, eggs, and milk. Mix until well combined.
Pour the wet mixture over the oat mixture and stir to combine.
Evenly divide the prepared oat mixture between all the muffin cups. Top each with a sprinkle of chocolate chips.
Place inside the preheated oven and bake for 20 to 25 minutes or until set and cooked through. Once done baking, allow the muffins to cool and then transfer them to an airtight container. It can be stored for up to a week.
