Tex-Mex Frittata Ingredients

  • 2 tablespoons of light olive oil
  • 1 heaping cup of small diced potatoes
  • 6 ounces of chorizo
  • 1/2 cup of finely chopped onions
  • 1/4 cup of finely chopped orange bell pepper
  • 1 large jalapeno (finely chopped) – optional
  • salt and pepper
  • 1/2 teaspoon of garlic powder
  • 8 large eggs
  • 1/2 cup of water (milk or cream)

For the topping:

  • 1/2 cup of diced tomatoes
  • chopped cilantro as needed
  • 1 cup of freshly grated Monterrey jack cheese

How to Make Tex-Mex Frittata

Step 1:

Place a skillet over medium heat and add the oil. Add the potatoes, chorizo, onions, bell pepper, and jalapeno. Season with pepper and garlic powder. Mix and cook for about 7 minutes or until the potato is almost tender.

Step 2:

Add the eggs, water, salt, and pepper into a bowl. Whisk to combine.

Step 3:

Step 4:

Add the chopped tomatoes, cilantro, and cheese. Place back the lid and remove from heat. Let it sit for 4 minutes or until the cheese is melted.
