Step 1
Preheat your oven to 350°F, then line a baking sheet with parchment paper or a silicone baking mat, and set it aside. Add the softened butter and powdered sugar in a large mixing bowl, then beat them until creamy, light, and fluffy. Add the salt, cherry juice, almond extract, and red food coloring, then mix them until well combined, and gradually add the flour while mixing continuously until soft dough forms.
Step 2
Add the maraschino cherries, then gently fold them until evenly distributed, and scoop out tablespoon-sized portions. Shape each portion into a ball, then roll them in granulated sugar until well coated, and place them on the prepared baking sheet making sure to space them 2 inches apart evenly.
Step 3
Place them in the preheated oven, then let them bake for about 12 to 15 minutes or until the edges are lightly golden, and gently press down a chocolate kiss in the center of each cookie. Allow the cookies to cool for a few minutes, then transfer them to a wire rack, and let them cool completely. Serve and enjoy!
