This cheddar cheese-stuffed chicken patty is a must-try, I guarantee you will love this, and might even finish a whole serving all to yourself! This is a very easy and quick dish to make on a budget and if you have some leftover ground chicken in the fridge, then you can use that, too.

Step 1
In a large mixing bowl, add the ground chicken, 1 beaten egg, 1 cup of panko breadcrumbs, mayonnaise, onion powder, garlic powder, and salt, then mix them until incorporated. Set up a dredging station in 3 separate shallow bowls, 1 with flour, 1 with the remaining beaten egg mixed with 1 tablespoon of water, and 1 with the remaining panko breadcrumbs.
Step 2
Divide the chicken mixture into 6 equal portions, then wet your hands, and shape eat portion into a flat patty. Get 1 patty, then place a cubed cheese in the center, and encase the cheese inside as you form the patty into a ball before flattening it again. Dredge the chicken patty in the flour, then dip it in egg, and coat in breadcrumbs.
Step 3
Do the same for the remaining patties, then preheat the peanut oil in a large frying pan over medium-high heat until it shimmers, and start cooking the patties in batches. Fry them for about 1 minute per side or until crispy and golden brown, then place the cooked patty on a plate lined with a paper towel to drain off the excess oil, and let it cool down. Serve and enjoy!
