Sweet potatoes are one of my favorite vegetables to eat because they are very delicious and there are a lot of ways that you can cook them to make them even more wonderful! You can cook them for dessert or baked goods and even for salads, one great recipe that I always use is this one by Spain on a Fork on YouTube.

Sweet Potato Salad
Dressing
Step 1
Cut the sweet potatoes into small bite-sized cubes, then add them into a stock pot, and fill them with water until almost covered. Generously season them with salt and pepper, then turn the heat to high, and let them cook for about 15 to 20 minutes or until cooked through or al dente.
Step 2
Once cooked, remove them from the heat, then drain off all the water, and set them aside to cool down for about 5 to 10 minutes while preparing the dressing. In a mixing bowl, add the olive oil, apple cider vinegar, honey, Dijon mustard, garlic, oregano, cumin, salt, and pepper, then whisk everything until fully combined.
Step 3
Once the sweet potatoes are cooled, transfer them to a large bowl, then add in sliced red onion, chopped parsley, dried cranberries, and crumbled feta cheese, and then season them with more salt and pepper to taste. Add the prepared dressing, then gently toss them together until well coated, and serve immediately or chill. Enjoy!
