This recipe is very easy to follow and if you want to take your version of this cake to the next level, then feel free to incorporate more pistachios, chocolate, or creamy pistachio spread, you can even top it with whatever you want. Ingredients for Chocolate Pistachio Cake:

Ganache

  • 250ml or 1 cup of heavy cream or all-purpose cream
  • 2 tbsp of butter, salted
  • 2½ cups of dark chocolate chips

Cake

  • ¾ cup of butter, softened
  • 1 cup of sugar
  • ½ cup of creamy pistachio spread
  • 2 tbsp of oil
  • 3 large eggs
  • 1 tsp of vanilla extract
  • 1/8 tsp of green food coloring, optional
  • 2¼ cup of all-purpose flour
  • 1½ tsp of baking powder
  • 1 tsp of salt
  • 1/3 cup of pistachio, chopped
  • 125ml or ½ cup of milk
  • More creamy pistachio spread, for filling

How to Make Chocolate Pistachio Cake:

Step 1

Place a saucepan on the stove, then add the heavy cream and butter, and heat them until it starts to boil. Turn off the heat, then pour the hot cream into the bowl of chocolate chips, and stir them around until completely melted and combined. Put it in the fridge to chill for a few minutes until needed or overnight.

Step 2

Preheat your oven to 160°C or 320°F, then add the softened butter and sugar in a large bowl, and mix them until light and fluffy. Add the creamy pistachio spread and oil, then continue to mix until incorporated, add the eggs one at a time, and mix well in between each addition.

Step 3

Add the vanilla extract and a few drops of green food coloring if desired, then mix well until uniform, sift over the flour, baking powder, and salt in two batches, and mix well in between each addition until well combined. Add the chopped pistachio nuts and milk, then continue to mix to incorporate, and make sure to scrape the sides and bottom.

Step 4

Line two 7×3-inch round pans with parchment paper, then divide the batter equally and place them in the preheated oven. Allow them to bake for about 40  to 50 minutes or until a toothpick inserted at the center comes out clean, then let it cool down completely, and trim the top and sides.

Step 5

Cut the cakes through in half, then spread the creamy pistachio spread and chocolate ganache on top of the first cake layer, and repeat with the remaining cake layers. Frost the cake with the remaining chocolate ganache, then serve, and enjoy!
