To make this Ritz Cracker caramel icebox cake, you need 6 ingredients – cream cheese, white sugar, Ritz Crackers, caramel sauce, vanilla extract, and whipping cream. If you want to make salted caramel icebox cake, sprinkle salt between layers. This recipe does not require baking, so no need for an oven. You can finish making this cake in just a few minutes. The only hard part is waiting for it to set, which can take hours. But I promise it is worth the wait. You can make it at night so you can enjoy it the next day.

Line an 8 x 8 baking dish with plastic wrap on all sides. Lay 16 pieces of Ritz Crackers on top of plastic wrap covering the bottom.
In a large bowl, add cream cheese and sugar. Mix with a hand mixer until smooth.
Add heavy whipping cream and vanilla. Mix for about 3 minutes or until thick and fluffy.
Dollop 1/3 of the cream cheese mixture and evenly spread on top of Ritz Crackers. Drizzle 1/3 of the caramel sauce on top. Sprinkle salt if preferred to make salted caramel icebox cake.
Make another layer of crackers using 16 pieces. Dollop 1/2 of the remaining cream cheese mixture and spread on top, then drizzle 1/2 of the remaining caramel sauce.
Add another layer of Ritz Crackers, then spread the remaining cream cheese mixture. Do not drizzle the caramel sauce for this layer.
Cover it with cling wrap and refrigerate for 12 hours.
Once set, remove from the refrigerator and take off the cover. Place a serving plate upside down over the dessert and flip to remove the cake from the baking dish. Remove the plastic wrap.
If preferred, top with homemade whipped cream or cool whip, then drizzle the remaining caramel sauce. Make sure to refrigerate leftovers.
