I have made this a couple of times, and it always turns out incredible. The melted cheese with the cooked chicken is seriously good.

Marinating the meat is the secret to a delicious chicken quesadilla. The chicken is marinated with different spices and seasonings for half an hour. This process will allow the meat to absorb all the flavors. It is a bit spicy, so if you don’t like spicy foods, adjust the amount of the spices.

In a large bowl, add the chicken, garlic powder, soy sauce, vinegar, chili sauce, salt, red chili, paprika powder, black pepper, tarragon herbs, thyme, or oregano. Mix until well combined. Let it marinate for 30 minutes.
Add 2 to 3 tablespoons of cooking oil into a pan over heat. Once hot, add the marinated chicken and cook for 2 to 3 minutes over high heat. Cover and lower the heat. Cook until the chicken is cooked through.
Add the chili garlic sauce and tomato ketchup. Mix until well combined. Add the bell pepper, tomato, and onion. Cook on high heat for a minute, then turn off the heat.
Lay a tortilla on your working surface, then sprinkle grated cheese on one side. Add chicken on top, then sprinkle more cheese. Fold the tortilla in half. Place a pan over heat and grease with oil. Once hot, add the folded tortilla and cook until browned and the cheese has melted.
Slice in half and serve. Enjoy!
