I love making fried rice recipes at home. They are easy to prepare and often ready in just half an hour. It is customizable, so you can add any ingredient you have on hand. Do you have leftover roast chicken or vegetables from last night’s dinner? Add them to your fried rice!
This is also a great way to reuse leftover cooked rice. Most fried rice recipes recommend using day-old rice, as it’s dryer, compared to freshly cooked rice, which is moist and sticky.
Cut the excess fat from the chicken, then cut into bite-size pieces. Place them in a bowl, then season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
In a separate bowl, add the eggs and beat with a fork.
Place a large non-stick skillet or wok over medium/high heat and add 1 tablespoon of oil. Once hot, add the chicken and cook for 4 to 5 minutes until cooked through. Transfer the cooked chicken to a plate.
Lower the heat to medium, then add 1 tablespoon of oil. Pour in the eggs and scramble for 1 minute using a spatula. Cook the eggs just until no longer wet, then immediately transfer to the plate with the chicken.
Hold a paper towel using tongs, then wipe the skillet clean. Add 1 tablespoon of oil and swirl it to cover the whole skillet. Add 5 cups of rice and spread evenly. Let it cook for 1 to 2 minutes without disturbing. After that, stir the rice and saute for 1 to 2 minutes. You should hear it sizzle.
Drizzle 2 tablespoons of soy sauce and 1 1/2 teaspoons of sesame oil. Stir well, then add the thawed vegetables. Mix until well incorporated.
Bring the cooked chicken and scrambled eggs back to the pan, then add 1/4 cup of green onion. Mix everything well. Cook until it sizzles while stirring frequently. Make a taste test. Add more soy sauce and sesame oil if needed.
