Ingredients:

  • 2 lb strawberries, rinsed and patted dry
  • 2/3 cup powdered sugar, divided
  • 3/4 cup heavy cream
  • 1/2 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 2 tbsp graham cracker crumbs

Directions:

Step 1

Grab a strawberry and twist off the green part at the top to remove it. Next, take a large piping tip and center it right over where the green part was. Twist it in, firmly press it in, then pop it out to remove the core. Repeat these steps for the remaining strawberries. (You can use a knife to carve out the center if you don’t have a piping tip.) Set them aside once done.

Step 2

Now, make the filing. Add 3/4 cup heavy cream in a large mixing bowl followed by half of the powdered sugar and 1/2 tsp vanilla extract. Mix all together using an electric mixer until stiff peaks. Set aside. Grab another bowl and add 8 oz of softened cream cheese and the rest of the powdered sugar. Stir together until well combined. Now, combine the cream cheese and the heavy cream mixture and fold them together until incorporated. Transfer it to a piping bag and pipe the filling into the cored strawberries. Sprinkle some graham cracker crumbs on top of each strawberry, then let them set in the refrigerator before serving.
