This pasta recipe is made from penne pasta, tomatoes, asparagus, and feta cheese. If you want to add some protein to make it heavier, add some chicken to your pasta.
This dish uses simple ingredients but is packed with flavor. Roasting the tomatoes gives that intense flavor. Give this recipe a try – it will surely be a staple in your home.
Start by preheating the oven to 400F.
In a 9×13 casserole, add the asparagus, tomatoes, 1/3 cup of olive oil, 2 minced garlic cloves, 1/2 teaspoon of black pepper, and 1/4 teaspoon of salt. Toss all ingredients to combine.
Make a space in the center of the casserole, then place the 8 oz block of feta. Drizzle the top with 1 tablespoon of olive oil and another sprinkle of black pepper.
Place inside the preheated oven and bake at 400F for 30 minutes until the tomatoes start to burst.
After 15 minutes, bring a pot of salted water to a boil. Once boiling, add the pasta and cook according to package instructions. Stir the pasta a few times to keep the pasta from sticking from the bottom. Reserve some of the pasta water, then drain completely.
When the tomatoes burst, remove from the oven and immediately stir in the remaining minced garlic and parsley. Using the back of a large spoon, press the cheese into the olive oil. Stir until the cheese is well incorporated.
Add the drained cooked pasta and stir well. Pour the reserved pasta, then serve warm.
