This easy slow cooker pot roast recipe by Island Vibe Cooking is absolutely one of the best versions I have ever made at home. The flavors are bursting in your mouth with each bite of the meat. The beef is tender, and the gravy is so flavorful. It instantly melts in your mouth – that is how good it is.

I already made this recipe several times, and it always gets finished easily. It is super easy to prepare. Start by seasoning your meat. The secret to a delicious pot roast is choosing the right cut of meat. Remember that tip. Sear your beef until browned and toss into the crock pot along with the other remaining ingredients. Cover it with the lid, and let your slow cooker do its magic. Once done, shred the meat, and it’s ready to serve.
It is perfect with mashed potatoes, rice, roasted vegetables, or crusty bread.

Start by mixing all the seasonings in a small bowl. Coat the beef with oil, then sprinkle the seasoning mix. Pat onto the skin. Flip it over and do the same on the other side.
Add 2 to 3 tablespoons on a skillet over heat. Once the oil is hot, add the beef and cook until golden brown. Flip and cook the other side.
Transfer the seared beef onto your crock pot. Add the carrots, potatoes, onion, thyme, minced garlic, beef cubes, Worcestershire sauce, beef broth, gravy seasonings, and cornstarch slurry. Cover with foil, and place the lid. Cook for 3 hours at 350F.
Shred the beef using two forks. Garnish with fresh parsley and serve. Enjoy!
