These breakfast muffins are made with egg, bacon, bell pepper, cheese, green onions, and Italian herbs. Add the bacon to a pan over heat without oil. Cook for a few minutes, then add the chopped bell pepper. Once the bell pepper is soft and the bacon is crispy, transfer to a plate lined with a paper towel to remove excess oil.
Sift the flour directly into a bowl to remove lumps. Add the cooled melted butter, buttermilk, egg, green onions, sauteed bacon and bell pepper, and Italian herbs. Mix until well combined. Add the shredded cheese and gently mix it in.
Line a muffin tin with parchment paper. Use butter to hold them in place. Evenly divide the mixture into the muffin cups.
Place in a 375F preheated oven and bake for about 20 to 30 minutes until golden brown. Once done baking, allow them to sit for 5 minutes in the pan before removing. Sprinkle chives on top. Serve and enjoy!
