For this recipe, you will be making a homemade crust. It is much better than anything you can buy from the stores, but if you are in a hurry, and don’t have much time, use a store-bought one. Gruyere cheese is preferred, but you can use other cheese you have in hand.
You won’t be disappointed when you make this recipe at home. The spinach and cheese is definitely a winning combination.

In a food processor, add the flour, salt, and cold cubed butter, then blend until crumbs form. Pour the cold water, then process again until it turns into dough. Make sure not to overmix it.
Transfer the dough to your work surface. Form it into a ball, then press it to flatten into a disk. Wrap it with plastic wrap, then place it in the refrigerator for 30 minutes.
Make the filling. In a large pan, add 2 tablespoons of butter and some olive oil. Once melted, add the chopped onions and sauté for 5 minutes.
Add the crushed garlic and spinach to the pan. Cook until they are wilted. Drain.
In a large bowl, add the eggs, heavy cream, salt, pepper, and nut. Beat well, then set it aside.
Lightly flour the board, then roll out the dough. Lightly dust it on top, then roll until the dough is about 1/8 inch thick. Transfer it to a 9-10 inch pie pan, then evenly press onto the bottom and up to the sides. Trim any excess dough, then gently pierce the bottom of the crust using a fork. Freeze for 30 minutes.
Preheat your oven to 350 Fahrenheit.
Place a parchment paper over the dough, then fill with dry beans, rice grains, or pie weights. Place inside the preheated oven and bake for 15 minutes. After that, remove the weights and parchment paper, then continue baking for 5 to 10 minutes or until the crust is slightly golden.
Remove from the oven then sprinkle spinach, gruyere cheese, and cubed blue cheese, then pour the eggs and cream mixture.
Place inside the oven and bake for about 35 minutes or until golden brown. Once done, allow it to cool slightly.
