All you need is a couple of minutes – no need to spend a lot of time in the kitchen. It’s creamy, cheesy, and packed with flavors. I highly recommend you try this dish at home.

You don’t need many ingredients for this pasta recipe and most of them are basic ones you already have in your pantry. The creaminess from the milk and ricotta cheese blends well with the earthy, complex flavors of the spinach leaves, the citrus flavor of lemon zest, and the savory flavor of the garlic. Everything complements each other, making this the perfect dinner meal.

Start by boiling water for the pasta and add a teaspoon of coarse salt. Once boiling, add 8 ounces of pasta and cook based on package instructions. Drain and set aside.
Place a pan over heat and add one tablespoon of olive oil. Once hot, add the minced garlic and saute for 30 seconds. Add the spinach leaves and a sprinkling of coarse salt. Saute until wilted for about 2 minutes.
Add the milk and ricotta cheese. Mix until smooth.
Add 1/4 teaspoon of ground black pepper and 1/4 teaspoon of salt. Zest the lemon and add to the mixture. Cook for about 2 to 3 minutes until it bubbles.
Transfer the pasta and mix well. Sprinkle over 3 tablespoons of grated parmesan or pecorino romano cheese. Mix well and make a taste test. Add more salt and pepper if needed. Serve and enjoy!
