Step 1
Preheat your oven to 350°F, then put the freeze-dried strawberries in a food processor, pulse them until fine dust, and reserve 1 tablespoon for rolling later. In a large bowl, add the butter and granulated sugar, then beat them over medium-high speed for about 2 minutes until smooth and creamy. Add in the strawberry powder, then continue to beat over low speed until combined, and mix in the pink food coloring until the desired color.
Step 2
Add the egg and mix to combine, then in a separate bowl, whisk the flour, salt, and baking soda until uniform, and add in the flour mixture to the wet mixture in 3 batches stirring in between each addition until completely combined. Mix the granulated sugar and reserved strawberry powder until uniform, then scoop about 1½ tablespoons of the dough, and roll it over the strawberry sugar until well coated.
Step 3
Place the ball on a baking sheet lined with parchment paper, then continue to roll the rest of the balls, and space them at least 2″ apart from each other. Bake them in the preheated oven for about 11 minutes, then allow them to cool on the baking sheet for several minutes, and transfer them to a cooling rack to cool completely. Serve and enjoy!
