Homemade Caramel Sauce:
Cream 1/2 cup + 1 tbsp butter and 1/2 cup + 2 1/2 tbsp sugar using an electric mixer in a medium bowl for three to four minutes. After this, add one egg at a time while whisking. Next, sift 1 1/3 cups plain flour and 1 tsp baking powder, then stir until combined. Add 1 tsp vanilla extract and 1/2 tsp almond essence and continue whisking for about 20 seconds. After this, set 1/2 of the batter aside for later use.
Now, make the caramel sauce. Add 3/4 cup sugar in a pan over medium heat. Caramelize it, then add 2 tbsp butter. Mix until the butter dissolves, then gradually add 1/3 cup heavy cream. Continue mixing until it gets thick and saucy. Turn off the heat once done. Set the caramel sauce aside and let it cool down.
Back to the batter, add half of the caramel sauce once it’s cool enough, and whisk it in for 25 seconds. Now, add the batter into the lined loaf pan, including the batter you set aside earlier. Sprinkle half of the chopped hazelnuts, then continue adding the batter. Using a chopstick (or anything available), swish the top to give the marbly effect. Once done, place the loaf pan in the oven at 350 degrees F and bake for 40 to 45 minutes. After baking, transfer to a plate, then drizzle the remaining caramel sauce mix with the remaining hazelnuts. Serve and enjoy!
