Melt 5.5 oz dark chocolate in a double boiler, then remove. Add another 1.5 oz dark chocolate and stir it in until smooth. Next, fill each of the six aluminum cups with a little less than half of the melted chocolate, then rotate to coat the wall with a thick layer of chocolate. Pour the excess chocolate back into the bowl. Once done, scrape the top edges, then place them upside down on a parchment paper-lined baking tray. Refrigerate for at least 30 minutes or until the chocolate hardens. In the meantime, make the raspberry puree. Add 5 oz fresh (or frozen) raspberries in a medium saucepot along with 1/4 cup sugar. Simmer for five to ten minutes, then remove from the stove. Once done, sieve the puree for a smooth texture.
